Kind Of Christmas Biscuits


I'm a big lover of festive biscuits like gingerbread and things full of spice but sometimes it can all get a bit too much. Me and my family love these biscuits, so much so I went to get one of these out of the tin today and they were all gone. Upsetting. They are super delicious and pretty much impossible to get wrong. You've got to love Mary Berry, she's the best!

Ingredients:

  • 75g semolina or ground rice
  • 140g plain flour
  • 75g light muscovado sugar 
  • 75g cocoa powder
  • 175g butter
  • 100g chocolate chips



Put all of the ingredients into a bowl and rub in the cubes of butter with your fingertips until it looks like breadcrumbs.


Work the dough together, it takes a lot of working, by warming it up and compacting it together.


Roll it out on a floured surface to 5mm thick and use a cutter (I went with christmas trees for the festive season) to cut them out, pretty obvious.


Put the biscuits on greaseproof paper on a tray and put into the oven on a 160c (fan) heat for 20-25 minutes.


Take out and leave to cool for a few minutes then transfer to a cool rack, wait a little bit and then enjoy! I am in love with these biscuits!
